Blueberry Avocado Quinoa Salad
Looking for something delicious and nutritious this summer? This colorful salad will be a favorite at potlucks or can be enjoyed as a healthy stand alone meal.

Directions
- Cook quinoa in the chicken broth. Bring to boil, then cover and reduce heat to low and cook for 15 minutes. Remove from heat and fluff quinoa with fork.
- In a large bowl, mix together cooled quinoa, blueberries, sweet corn, red onion, red bell pepper, avocado, feta, pecans and cilantro.
- While quinoa is cooking, add dressing ingredients to a blender and blend until smooth. Pour over quinoa salad and toss to combine. Enjoy!
- For a delicious main dish salad, you can add Nutristore’s grilled chicken, reconstituted.
