Blueberry Avocado Quinoa Salad

Looking for something delicious and nutritious this summer?  This colorful salad will be a favorite at potlucks or can be enjoyed as a healthy stand alone meal. 

Ingredients
  • 1 cup Nutristore blueberries
  • 1 cup Nutristore sweet corn 
  • 1 cup uncooked quinoa 
  • 2 cups chicken broth 
  • ½ cup diced red onion 
  • ½ diced red bell pepper 
  • 1 avocado diced 
  • ½ cup feta cheese crumbles 
  • ½ cup chopped pecans 
  • ½ cup chopped cilantro 

Dressing:

  • 1/3 cup packed cilantro leaves 
  • ¼ cup olive oil 
  • 2 T. Plain Greek Yogurt 
  • 1 lime juiced 
  • ½ jalapeno seeded and chopped 
  • 1/8 t. kosher salt

Directions

  1. Cook quinoa in the chicken broth.  Bring to boil, then cover and reduce heat to low and cook for 15 minutes.  Remove from heat and fluff quinoa with fork.
  2. In a large bowl, mix together cooled quinoa, blueberries, sweet corn, red onion, red bell pepper, avocado, feta, pecans and cilantro.   
  3. While quinoa is cooking, add dressing ingredients to a blender and blend until smooth.  Pour over quinoa salad and toss to combine.  Enjoy! 
  4. For a delicious main dish salad, you can add Nutristore’s grilled chicken, reconstituted.
