 A hash browns and sausage breakfast casserole is a hearty and satisfying dish that is perfect for a weekend brunch or a quick and easy weeknight meal. It is made with layers of hash browns, sausage, cheese, and eggs, and it is baked until golden brown and bubbly. This casserole is sure to please everyone at the table, and it is a great way to start your day!

Preparation

  1. Preheat oven to 350°F. Spray 9 x 13 baking dish with cooking spray. 

  2. Mix hash brown, sausage, onion, 1 ½ cups of cheese, and peppers if desired. Mix and spread evenly in prepared dish.

  3. In a large bowl, add eggs, milk, salt, pepper and italian seasoning to large bowl. Whisk until well combined.

  4. Pour the egg mixture over the hash brown mixture and sprinkle the remaining cheese over top the last 10 minutes of baking. 

  5. Bake uncovered for 60-65 minutes or until cooked through. Let rest 5-10 minutes before serving.

Can prepare and refrigerate up to 24 hours in advance before baking
