Ultimate Granola

This healthy and delicious granola will convince you to never settle for an inferior store purchased granola ever again.

  • 7 cups rolled oats
  • 2 cups of coconut (unsweetened flakes or shredded)
  • 1.5 to 2 cups nuts and seeds, either whole, chopped or slivered (pecans, almonds, cashews,
    sunflower seeds, or pumpkin seeds, etc)
  • 1/2 cup of ground flax seed (optional)
  • 1 cup of wheat germ (optional)
  • 1 cup of coconut oil
  • 1/3 cup honey
  • 1/2 cup brown sugar
  • 1/3 water
  • 1/2 tsp salt

  1. Mix first 5 ingredients in a very large bowl and set aside.
  2. Add the next 5 ingredients to a saucepan and heat on stovetop until smooth and warm - stir.
  3. Pour liquid mixture over the dry ingredients and stir with a big spoon until all ingredients are thoroughly mixed and wet.
  4. Place mixture on TWO ungreased cookie sheets (or 9x13 pans if you need).
  5. Bake for 25 minutes at 325°F.
  6. Switch pan positions or stir cookie sheet. Bake another 15 minutes at 225°F degrees.
  7. At this time, add freeze-dried fruit and stir. Bake another 10 minutes at 225°F. Turn off oven and leave granola in the oven for one hour.
  8. Remove from oven and cool, break into desired sized chunks, and store in an airtight container or in the freezer.

A delicious breakfast or snack with milk. Try it as a topping on yogurt, or ice cream!
